Cooking with wines
Adding a splash of wine to your dinner as it cooks away can really help bring out new flavours and aromas. It’s also great for keeping moisture in.
Why should you cook with wine?
Many people have the misconception that cooking with wines will make a dish taste alcoholic. However, the majority of the alcohol actually burns off during the cooking process. The longer you cook your dish, the less alcohol will be in it.
How to cook with wines
There are several different methods you can use to cook with wine.
- Marinades. A wine’s acidity can help break down fibres in meats, so marinading meat in wine for a couple of hours, or overnight, is a great idea and you can even throw in some vegetables too to further enhance the flavour.
- Reductions. A reduction is made by thickening a wine over heat, usually reserved for red wines, to create a concentrated sauce.
- Gravy base. Pan-fry your meat or vegetables, remove and then add your desired wine. Stir it among the brown bits on the pan, this will help create a tasty base for your gravy.
- Baking. Wine can also be used in baking as well as cooking. Cakes can often have a drop of wine or champagne added to them for extra luxury.
